These are lovely for Sunday morning coffee.

400g white spelt flour
100g oats
100g butter
2 tsp baking powder
2 large eggs
2 medium size very ripe bananas
2 tbsp maple syrup

I punnet of blueberries 125g, washed and dried on kitchen paper

Place first 4 ingredients into your food proessor and process for a few seconds just to cut up the butter finely into the flour and oats.
Place into a bowl whle you process the eggs and banana and maple syrup together until the banana is liquidised.
Stir the blueberries into the flour butter mix and then stir in the egg and banana mix until roughly combined.

Turn out onto a lightly floured surface, knead a couple of times to bring the dough together, then shape into a round about 3 inches thick. Press out about 9 or 10 scones, bringing tohether the scraps to make another scone.

Place on a floured baking sheet and brush tops with a little egg or milk (optional).

Bake for 20 minutes or until risen and lightly browned and when you tap the bottom they sound hollow.

Place on a cooling rack and when cool split and serve with butter.
