I love to start the day with a green smoothie but somedays I don’t have the time to make one – so I have made a smoothie puree (just using the veggies, no added water) and frozen portions in silicome muffin cases. I take one out of the freezer, add some water and wizz it up in my processor and hey presto instant green smoothie!

My Ingredients

A large handful of spinach
3 celery sticks
1 avocado, peeled and stone removed
Handful of parsley
1 apple or pear
2 inch piece ginger root, peeled
1/2 cucumber
Juice of 1/2 lemon
1 tbsp honey
1 tbsp coconut oil
(I sometimes add fresh turmeric, flax oil instead of coconut, orange instead of lemon, just use what you like.)

Roughly chop everything and process in your food processor until everything is pureed.
Spoon into  silicone muffin moulds and freeze for a few hours.
Press out when frozen and put into a freezer bag and freeze until required.

Use one portion per person. Add to your processor with a glass of water and wizz until combined.
Drink and feel virtuous!
