A simple soup for a cold winters day – the hint of lemon adds a freshness to an otherwise hearty soup.

200g red lentils
2 carrots, chopped
2 sticks celery, sliced
1 onion, chopped
2 cloves garlic, sliced
1 inch ginger, peeled, grated and chopped
1 tsp vegetable bouillon
1 tsp turmeric
1 tsp cumin
1 tsp coriander
1/2 tsp chilli flakes
Juice of 1/2 lemon and zest of 1/2 lemon

Salt and pepper to taste

Fry the onion,  carrots and celery together for a few minutes. Add the garlic, ginger, bouillon and spices and lemon zest, cook for a few seconds then add the lentils and enough water to cover.
Bring to the boil and turn down to a simmer with the lid on for 20 minutes or until everything is soft.
Add the lemon juice and liquidise in bursts with a hand held blender to leave some texture. Thin with more water if necessary.
Add salt and pepper to taste.
