Delicious roast vegetables to go with the Festive nut roast wellington.

2 carrots, chopped into bite size pieces
2 parsnips, as above
Aprox 10 baby potatoes, halved or 2 sweet potatoes chopped into bite size pieces
1 large red onion, chopped into bite size pieces
Approx 12 Brussels sprouts, halved
3 tbsp olive oil
1 tbsp maple syrup
2 tbsp tamari
1 head of garlic, separated and peeled

Put all the ingredients into a large bowl except the sprouts and garlic -mix together with 2 tbsp of the oil.
Place into a large baking tray in a single layer and sprinkle over salt and pepper.
Bake for 20 minutes in the centre of the oven.
Toss the sprouts and garlic in 1 tbsp oil and add to the tray turning over and bake for another 30 minutes or until everything is cooked and browned.
