Was wondering what to do with a bowl of very ripe nectarines and this is what I came up with! Delicious for dessert with ice cream or yoghurt or makes a delicious breakfast!

6 very ripe nectarines, washed and sliced, stones removed, skin on
200g ground almonds
50g desiccated coconut
75g butter ir ccoconut oil for dairy free
75g coconut blossom/palm sugar or light brown sugar plus 1 tbsp
1 large egg, beaten
1/2 tsp almond extract
2 tbsp flaked almonds

Preheat oven gas 5 or 280 C


Place the prepared nectarines into a buttered dish approx 20cm diameter. Sprinkle with 1 tbsp sugar. If they arent very ripe, place them in the oven for 10 minutes to soften, then let them cool a little before adding the almond cobler topping.

Place ground almonds into the bowl of your food processor with the coconut and sugar

Add butter in chunks and almond extract and process till resembles fine bread crumbs.

Add egg and combine for a few seconds.

Spoon onto the nectarines in blobs, merge a little with a wet knife and sprinkle with flaked almonds.

Bake in the centre of the oven for 30 minutes or until nicely browned.

Serve with ice cream or yoghurt or coconut yogurt.
